“Farm-to-Table and “Garden-to-Plate” are trendy terms, but it’s what we’ve always done. Our vegetables, lettuces, savory herbs, free-range poultry, eggs, heirloom pork, grass-fed lamb and beef are all supplied by local farmers we know.
We import Caputo Flour from a fourth-generation family farm located right east of Naples on the plains north of the Vesuvius volcano. It’s traditionally used in Italy for specific qualities in high temperature wood-fire cooking.
For our simple styled red sauces, we import superior San Marzano tomatoes grown in the volcanic plains of Mount Vesuvius. The “Fiore di Latte” fresh Mozzarella we use is considered to be the best for our style of pizzas.
We are Colorado’s only pizzeria that sources fresh ingredients from our farm, local growers and ranches.
Our approach is simple: the key to creating a superior product is having a direct connection to the food.
